Job Description:

Produces high quality food in flavor and presentation; Adheres to the specifications, standards and proper recipe production of high volume food items set forth by the chef; Utilizes ovens, slow cookers, grills, griddles, broilers, deep fryers, braisers, steam jacketed kettles, ranges, salamanders, steamers, combi-ovens, electric slicers, knives, steam tables and other equipment for ala carte food preparation; Prepares hot and cold food items to according to specifications; Maintains detailed consistency in food presentation and flavor.

Job Requirements:

TYPICAL PHYSICAL / MENTAL DEMANDS: Must have the abilities to work in small areas. To handle basic kitchen equipment in his/her area. Able to push buttons, turn knobs, reach into small place, manipulate small objects and use switches. Requires normal vision and hearing, normal ranges of motion and good eye-hand coordination.

TYPICAL WORKING CONDITIONS: Must be able to work under physically and mentally stressful conditions; Work is often performed in hot noisy conditions; Requires lifting, stretching, bending and pushing/pulling. Most of shift is spent standing. Typical work week is 2-3 days with main hours in the evenings.

PERFORMANCE REQUIREMENTS:

Knowledge, skills and abilities: Must be able to read and write in English; Have accurate high production knife skills; Hot food production knowledge including roasting, sauté, broiling, deep frying, shallow frying, steaming, boiling, braising, large batch cookery, sauce production, soup production; Cold food production knowledge including but not limited to salads, fruit platters and dressings.

Education: Culinary arts degree, culinary vocational school diploma or equivalent work experience preferred.

Experience: Requires 2 years experience in high volume ala carte kitchen. Previous experience using high end ingredients and detailed attention to presentation preferred.
